Undlika is a traditional and a recipe from the good old days where, many might not even have heard about it. It is usually prepared during ganesha festival, where we prepare both spicy and sweet undlikas. Basically it is a dish prepared out of rice and seasoned with green chillis and other spices for the spicier version. Today, I will be posting the spicier version of it. The common version of preparing this recipe is by using the rice flour as a basic ingredient, but in my house, my mother and grand mother used to prepare these undlikas by grinding the rice and steaming the same. Of course, it is a cumbersome method but the result is very tasty and amazing. In Tamil Nadu, it is known as ammini kozukattai and in Andra Pradesh, it is called undralla guggillu but anyway names do not matter where only the taste counts.

The time taken to prepare this dish is around 1 hour and the quantity mentioned here is enough for 3 servings.Ingredients For Ammini Kozukattai / Undlige Recipe.
- Raw rice - 1 cup.
- Salt - as required.
- Coconut scrapings - 1 / 4 cup.
- Green chillis - 4.
- Water - 2 cups
For Seasoning
- Oil - 1 tbsp.
- Mustard seeds - 1 tsp.
- Urad dal ( black gram dal ) - 1 tsp.
Method To Make Undlika Recipe.
- Wash and soak the rice for around 1 hour.
- Drain the water completely and grind it in the mixer jar into a smooth paste by adding required quantity of water.
- Heat a deep pan or a thick bottomed kadai.
- Transfer the ground rice and the remaining water into the pan.
- Add salt and stir the mixture continuously till it forms a hard lump ( Around 20 minutes ) on a medium flame.
- Allow the mixture to cool, and later on, roll out small marble sized balls out of it.
- Steam the undlikas in in the cooker for around 15 minutes.
- Now heat another pan with oil in it.
- Add urad dal and mustard seeds into it.
- When the seasoning ingredients starts to crackle add the chopped green chilli and scrapped coconut and fry for a minute.
- Mix in the steamed rice balls into the pan and fry till the rice balls gets coated with the coconut and green chillis.
Your tasty and spicy undlikas is ready to be served!!!.

- See to it that the ground rice does not stick to your fingers after stirring . This indicates that the mixture is properly cooked.
- You may grease your fingers with oil while rolling out the balls.
- As I have mentioned earlier, you may even use rice flour instead of raw rice.
- I have used coconut oil for seasoning but you are free to use any variety of your choice.
- The consistency of the ground rice batter should resemble to that of Neer Dosa Batter. ( pouring consistency ).
