Beans Pallya / French Beans Stir Fry ( Sabzi ) Recipe

French beans pallya is authentically a South Indian recipe which could be prepared in a jiffy. This beans pallya recipe is common in every household but recognised by different names. In some parts it is known as beans poriyal, but anyway, the taste does not differ much. We prepare this string beans pallya in two ways out of which, I will share one variety of it today. It is such a versatile side dish that you could eat this with hot rice, tomato saar chapathi, or even with simple and humble curd rice. Here we mix chopped beans with ground coconut, byadige chillies and season it with traditional coconut oil which is very popular in Udupi and other south kanara areas.

French Beans Pallya / Sabzi / Stir Fry Recipe.

The time taken to prepare this pallya is around 30 minutes and the quantity mentioned here is enough for 2 servings.

String Beans Pallya Ingredients.


  • French Beans - 1 / 4 kg.
  • Green chillis - 2
  • Red chillis ( byadige ) - 4
  • Salt - as required.
  • Turmeric powder - 1 tsp.
  • Tamarind juice - 1 tbsp.
  • Coconut scrapings - 1/4 th cup.
  • Jaggery - 1 tsp.
  • Mustard seeds - 1 tsp.

For seasoning:

  • Coconut oil - 2 tsp.
  • Urad  dal ( black gram dal ) - 1 tsp.
  • Mustard seeds - 1 tsp.
  • Curry leaves - 2 strings.


Method To Make French Beans Pallya

  • Destring the beans and wash it thoroughly. 
  • Chop them into small pieces.
  • Heat a deep pan with coconut oil in it.
  • Add broken red chilli, urad dal, mustard seeds and curry leaves in it.
  • When the seasoning starts spluttering, add chopped green chillis and string beans into the pan.
  • Add turmeric powder, salt and tamarind juice into it.
  • Close the lid and allow the beans to boil.
  • Meanwhile, take a mixer jar and add coconut scrapings, broken red chillis and mustard seeds into it.
  • Grind them into a fine powder without adding water.
  • Now, check if the boiling beans have turned tender. This might take around 15 minutes.
  • Add jaggery and powdered coconut mixture into it.
  • Finally, add one tsp of fresh coconut oil and ix it well.

Your quick and spicy sauteed beans pallya is ready to be served.!!!!!

Kitchenmasti Points :

  1. It might take roughly around 15 - 20 minutes for the beans to boil.
  2. Adding jaggery is optional.
  3. Using coconut oil gives you an authentic taste, nevertheless, other edible oils can also be used if coconut oil is not preferred.
