There are different varieties of dosas out there. Set Dosa is an ideal breakfast recipe which is very popular in most of the houses in South India. It is nutritious like any other dosas because of the presence of lentils. You can relish this dosa along with coconut chutney, veg kurma and even any spicy pickles if you are lazy to prepare any side dish. I have already published the vegetable sagu recipe recently. It is an ideal set dosa sagu recipe. Usually 3 dosas are stacked together in restaurants, henceforth it has derived its name as Set dosa. Here, we prepare the set dosa batter by grinding rice along with black-gram dal and fenugreek seeds followed by 8 hours of fermentation of batter and forming a small 5 inch sized pancakes. Few people refer to Set Dosa as sponge dosa too. So, the sponge dosa recipe is as follows :

How To Prepare Set Dosa / Sponge Dosa.
The time taken to prepare this dosa is around 8 hours for fermenting the batter, 10 minutes for grinding and 10 minutes for cooking. The quantity mentioned here is enough for 5- 6 serving. Ingredients for the Set Dosa Recipe are as follows:
Ingredients For Set Dosa.
- Idli Rice - 1 cup.
- Raw Rice - 1 cup.
- Salt - as required.
- Beaten rice ( poha ) - 1 / 2 cup.
- Blackgram dal ( urad dal ) - 1 / 4 cup.
- Fenugreek Seeds - 2 tsp
- Oil - for greasing the pan.
Method To Make Set Dosa.
- Wash the rice and dal separately and soak in 2 different bowls for 3 hours.
- Soak fenugreek seeds along with urad dal ( blackgram ).
- Later on, grind the urad dal either in a mixer or a grinder adding water at regular intervals till it turns into a smooth batter
- Now grind the rice till it reaches smooth consistency.
- Add poha while grinding the same.
- Mix both the batters.
- Add salt and sugar.
- Cover the batter and allow it to ferment for around 8 hours.
- After the fermentation, heat the pan or the dosa tawa on a medium heat.
- Smear oil and pour 2 ladles of batter. Do not spread in circles like any other dosa.
- Close the dosa with a lid.
- After 2 minutes, flip the dosa on to the other side.
- Transfer the dosa within a minute from the tawa on a serving plate.
KitchenMasti Points.
- You can sprinkle some carrot gratings and chopped coriander leaves over the dosa after pouring the batter.
- Add 1 tbsp of rice flour into the batter if you feel it is too watery.
- You can add 1 tsp of baking powder for a fluffy dosa but it is optional.
- This dosa tastes best when it is hot.
