Rava Holige is a sweet dish prepared on some special occasions like weddings, festivals, or during a significant pooja. Basically, it is a sweet chapathi prepared out of semolina. Here, we prepare a dough out of maida flour and another stuffing using semolina and sugar. Later on, semolina-filling is stuffed inside maida puri and roasted on a medium heat. Different types of holige are prepared like coconut holige, dal holige, which is popularly known as puran poli in Maharastra. The procedure is mentioned below.

How To Prepare Rava Holige / Semolina Holige.
The time taken to prepare this rava holige is around 2 hours and you can prepare around 15 holiges out of this measurement.Ingredients For Rava Holige.
- Rava ( semolina ) - 1 cup.
- Sugar - 1 1 / 4 cup.
- Cardamom powder - 1 tsp.
- Maida ( all purpose ) flour - 1 cup.
- Salt - a pinch.
- Saffron color - 1 / 4 tsp.
- Ghee - 1 cup.
- Oil - 1 / 4cup.
Method To Make Rava Holige.
For The Maida Dough.
- Take a medium sized bowl and add seived maida into it.
- Add salt and saffron colur into it.
- Mix everything with a little water and knead the dough so that it should be pliable when streched.
- Now add oil and let the dough rest in it for about an hour
For The Stuffing.
- Heat a deep pan on a meduim heat.
- Add 2 tbsp of ghee into it.
- When heated, add rava and roast it on a low to medium heat .
- Meanwhile boil 3 1 / 2 cups of water in another bowl.
- Keep roasting with a spatula till you sense a mild aroma.
- Transfer the boiling water into the semolina pan. Keep stirring till it gets mixed properly.
- Add sugar, cardamom powder and saffron color. Mix it well.
- Finally add ghee and mix it well. Allow it to cool.
- After an hour, prepare small lemon sized balls out of the maida dough.
- Now prepare balls out of the semolina stuffing, slightly bigger than the maida balls.
- Flatten the maida balls into a puri shaped size on your palm nd place the semolina stuffing inside this.
- Cover the semolina balls completely with the dough and seal the edges properly.
- Now dust these balls on maida flour and roll out chapathis as thin as possible.
- Heat a griddle or a pan.
- Roast these holige on the pan till small brown spots appear on it.
- Flip it on the other side and roast it too.
- Smear ghee lavishly over the holige.

Kitchenmasti Points.
- The quantity of the ghee can be increased for a richer taste.
- See to it that the rava is fried well , or else, it may lead to the formation of lumps when the water is added.
- Soaking the maida dough in oil is very important or else, you may end up in preparing hard holige.
- You may add nutmeg powder for an unique taste.
