HOW TO PREPARE PUMPKIN SOUP
The time taken to prepare this soup is around 30 minutes and the quantity mentioned here is enough for 4 persons.METHOD TO MAKE CREAMY PUMPKIN SOUP.
INGREDIENTS FOR THE SOUP.
- Red Pumpkin - 3 / 4 Kg.
- Cream - 1 / 2 Cup.
- Salt - 2 Tsp.
- Pepper - Powder - 2 Tsp.
- Milk - 2 Cups.
- Onion - 1 / 2
- Garlic - 1 Clove.
- Butter - 2 Tbsp.
METHOD TO MAKE THE SOUP
- Remove the outer covering of the pumpkin with a knife and roughly chop it into 1 inch blocks.
- Boil it in the pressure cooker until 1 whistle
- Keep it aside.
- Heat a small pan and add a dollop of butter into it.
- When melted, add finely chopped garlic and onion into it and saute it for a few seconds.
- Later on, grind the cooled pumpkin pieces and the fried ingredients in the mixer jar and puree it smoothly.
- Now, heat a deep panned vessel and add the puree, salt and pepper and allow it to boil.
- Finally, add boiled milk and let it simmer for a while
- Switch off the flame and enrich the soup with fresh cream
- Now serve your loved ones with this rich creamy hot pumpkin soup.
KITCHENMASTI POINTS
- If you are diet conscious, you can ignore the fresh cream
- You can replace milk with skimmed milk if you find it too heavy
- A pinch of oregano can be added for a unique taste..
- Garlic is optional
