Nawabi curry, a mugalai cuisine is a side dish which is very rich in calories and taste. It is one of the perfect party dishes where you can win accolades and impress your guests. It is mounted with calories and the richness of almonds and kaju can be experienced every time. Also, the freshness of the cream adds to the silkiness of the gravy. Here, a gravy is prepared using almonds and coconut along with some vegetables.You can replace the veggies and add paneer ( cottage cheese ) which is the other version of this recipe and I will be posting it in one of my future blog posts. This curry goes well with Naan, Puri, and chapathi.
How To Prepare Nawabi Veg curry.
The preparation of this dish is quite easy as any other curry and the time taken to prepare it is around 30 minutes. The quantity mentioned here is enough for 4 servings.
Ingredients For Nawabi Veg Curry.
- Fresh vegetables chopped - 1 cup. (French beans,carrot,corn).
- Tomatoes - 3.
- Onions - 2.
- Almonds - 4.
- Cashew - 6.
- Poppy seeds - 1 tsp.
- Coriander seeds ( dhania) - 1 tbsp.
- Cumin seeds ( jeera ) - 1 tbsp.
- Fennel seeds (somp ) - 1 tbsp.
- Clove - 2.
- Cinnamon - 1 inch.
- Cardamom - 1.
- Coconut scrapings - 1 tbsp.
- Red chillies ( byadige ) - 4.
- Milk - 1 / 4 cup.
- Fresh cream - 1 / 4 cup.
- Salt - as required.
- Ghee - 2 tbsp.
- Sugar - 1 tbsp
Method To Make Nawabi Veg Curry.
- First and foremost, wash all the vegetables thoroughly and chop them into a small notable size.
- Heat a vessel full of water and allow it to boil. Add washed tomatoes and switch off the fame.
- When cooled, peel the skin and puree it in a mixer.
- Now take a mixer jar and add chopped onions, clove, coconut scrapings, fennel seeds, jeera, coriander seeds, almonds, cashew, soaked poppy seeds, red chillies and run the mixer till it turns into a paste.
- Heat a pan with 2 tbsp of ghee in it.
- Transfer the ground paste into it.
- Fry for 2 minutes and add the tomato puree to it.
- Add salt, sugar and boiled vegetables to the pan.
- Simmer for around 2 - 3 minutes.
- Mix in milk and fresh cream and allow it to boil for 2 minutes and switch off the flame.
Your creamy rich Nawabi veg curry is ready to be served.!!!!!
Kitchen Masti Points
- If you have forgotten to soak poppy seeds ( 2 -3 hours minimum soaking is recommended ), then slightly roast it and grind.
- Usually this gravy is not spicy, hence I have added lesser amount of red chillis.
- You can increase the amount of milk instead of water and adjust the consistency of gravy.
