Rice balls / rice dumpling or commonly known in its traditional form as pundi gatti, is one of the healthiest breakfast recipes. Basically, here rice is powdered coarsely, mixed with boiling water and seasoned with hot spices, formed into balls and finally steamed. Of course, the process is bit lengthy but I can assure you the dish for its sumptuous taste. I have already mentioned the preparation of coarsely powdered rice in my broken rice upma recipe, so, you can follow the same.

How To Prepare Rice balls / Pundi gatti.
The time required is around 20 minutes to prepare the dough and around 15 minutes for steaming it. The quantity mentioned here is enough for 3 servings.Ingredients For Rice Balls.
- Raw Rice - 1 cup.
- Salt - as required .
- Water -1 1 / 4 cup.
- Green chillis - 3.
- Coriander leaves - 3 sprigs.
- Coconut scrapings - 1 / 2 cup.
For Tadka ( seasoning ).
- Oil - 1 tbsp.
- Broken red chilli - 1
- Urad dal ( black gram dal ) - 1 tsp.
- Mustard seeds - 1 tsp.
- Curry leaves - 1 string.
Method To Make Pundi gatti.
- First and foremost, you have to prepare coarse rice powder. For this, refer broken rice upma recipe ( rice rava ) that I have already shown previously.
- Heat a big deep pan or a kadai with oil in it.
- Add the broken red chilli, urad dal, mustard seeds and curry leaves into it.
- When it starts spluttering, add the chopped green chillis and fry it for around a minute.
- Meanwhile heat another vessel for boiling the required quantity of water.
- Now add the coarse rice powder into the pan with the seasoned ingredients and stir it for sometime.
- Add the boiling water into the pan and slowly stir it continuously so that no lumps are formed.
- Stir it well until the mixture thickens and a solid dough is formed.
- Allow the dough to cool.
- Add chopped coriander leaves and grated coconut scrapings. Mix it well with the dough.
- When the dough is completely cooled, form big lemon sized balls.
- Steam it in a cooker without the weight for around 15 minutes.
Your healthy and nutritious pundi gatti is ready to be served.!!!
Kitchen Masti Points.
- You can use the idli rice which is easily available in the market in this recipe.
- While serving the rice balls, top it with a spoon full of coconut oil or any other oil for a delicious taste.
- Coconut chutney is the ideal combination to relish these rice balls.
- While steaming the rice balls, you can use the idli stand also.
