Bottlegourd / lauki / sorekayi halwa ( dessert )

Halwas can be prepared using many vegetables and fruits and the most common well known halwa is the carrot halwa which is the favorite among many sweet lovers. One more addition to the halwas is a sweet prepared out of the vegetable bottleguard which is otherwise most commonly known as lauki or doodhi. This vegetable has a natural cooling effect qualities in it. You can prepare many varieties of curries out of this vegetable. In this recipe, bottlegourd is mixed with milk, sugar and clarified butter ( ghee ) which gives an exotic taste .

How To Prepare Bottlegourd / Lauki / Sorekayi Halwa.

The time required to prepare this halwa is around 20 minutes for grating the bottlegourd and another 30 minutes for cooking it.

Ingredients For Bottlegourd Halwa.


  • Bottle Gourd - 1 cup.
  • Sugar - 2 tbsp.
  • Ghee - 4 tbsp.
  • Salt - a pinch.
  • Cardamom powder - 1 tsp.
  • Cashew nuts - 5.
  • Raisins - 5.
  • Milk - 1 / 4 cup.

Method To Make Bottlegourd / Lauki / Sorekayi Halwa.


  • First and foremost, wash the bottle gourd and scrap the outer layer of  the vegetable.
  • Now slit it into 4 pieces and remove the seeds from it.
  • Grate the vegetable in to fine scrapings.
  • Heat a big deep pan or a kadai.
  • Add the grated bottle gourd and milk in to it and keep boiling in medium flame till the vegetable is totally boiled and the milk is entirely evaporated.
  • Now add sugar and keep stirring in low flame.
  • Add ghee at regular intervals when the mixture begins to thicken.
  • Keep stirring the mixture till it turns thick and a glaze appears in it.
  • Finally add the raisins, fried cashew nuts, salt and cardamom powder.
  • Mix it well and serve it in a bowl.

Your delicious and tasty dessert - bottle gourd halwa is ready to be served !!!!!.

  1. You can reduce the milk and sugar and add milkmaid in the halwa.
  2. 2 tbsp of kova can be mixed for a richer taste.
  3. You can store this halwa for 2 - 3 days.
  4. 1 tsp of rose essence can also be added.
