Sometimes, it is very likely for us to go blank and ponder over the menu in search of different gravies to satiate our taste buds. So today I thought of publishing Achari bhindi which goes on well with puri, chapathi, naan roti and so on. As the name itself suggests achari bhindi, here we use achari Masala. In Hindi the word achari stands for pickle, hence we prepare this curry using the spices which are used in preparing pickle. Instead of ladies finger ( okra ) you can replace it with paneer ( cottage cheese ) and prepare the same achari paneer masala which I will be publishing shortly.

How To Prepare Achari Bhindi Masala.
The ingredients mentioned here is enough for 4 servings and the time taken to prepare this is around 30 minutes.Ingredients For Achari Bhindi.
- Ladies Finger ( okra or Bhindi ) - 1 / 2 kg.
- Onion - 2.
- Tomato - 1
- Ginger garlic paste - 1 tbsp.
- Fennel seeds ( saunf )- 2 tsp.
- Mustard seeds - 2 tsp.
- Fenugreek seeds ( methi seeds ) - 1 / 2 tsp.
- Cumin seeds ( jeera )- 1 tsp.
- Red chillis - 7
- Salt - as required.
- Turmeric powder - 1 / 2 tsp.
- Oil -1 tbsp.
- Coriander powder - 1 tsp.
- Coriander leaves - a few sprigs.
- Lemon juice - 1 tsp.
- Oil - for deep frying
- Bay Leaf - 1
Method To Make Achari Bhindi Masala.
- Wash the ladies finger ( okra ) and dry it.
- Chop the ends of the okra.
- Prepare the onion paste.
- Dry roast fennel seeds, red chilli, cumin seeds, mustard seeds, fenugreek seeds and powder it in a mixer.
- Now heat a pan with oil in it.
- When it gets heated, add the bay leaf, onion paste, and fry it for a few seconds till the raw smell disappears.
- Add the chopped tomato and green chillis to the pan.
- Mix in salt, turmeric powder, coriander powder and ginger garlic paste and fry for a few seconds.
- In the mean time, heat a deep pan filled with oil for deep frying the okra.
- Chop the okra into 1 inch pieces.
- Add the chopped ladies finger and deep fry for around 2 minutes.
- Remove the fried okras from the pan and place them on an absorbent paper.
- Transfer the fried ladies finger into gravy pan.
- Finally mix in the lemon juice and garnish it with coriander leaves.
Your tasty and yummy achari bhindi is ready to be served.!!!
Kitchen Masti Points.
- You can add 1 tsp of sugar along with the other spices for a slight sweetish tinge.
- Instead of adding chopped tomatoes, you can even add the tomato puree. In this case, the gravy will be in liquid consistency.
- Add red chilli powder for a spicer gravy.
- 1 tbsp of butter may be added to enhance the taste of the gravy.
- You can also add chopped onions as I have done in this recipe.
