Stuffed kulcha is a kulcha stuffed with potato and mixed with some spices along with coriander leaves. It is available in all restaurants in India. It is a very heavy meal and the kids will surely love it. It can be eaten with kadai paneer, Channa Masala and other spicy curries.
How To Prepare Stuffed Kulcha.
This dish requires 10 minutes for kneading the dough, and another 10 minutes for cooking. The dough should be kept aside for 4 hours.Ingredients For Stuffed Kulcha.
- Maida ( all purpose flour) - 2 cups.
- Milk - 1/2 cup.
- Salt - as required.
- Baking soda - 1/2 tsp.
- Sugar - 1/2 tsp
- Curds - 1/2 cup.
- Yeast - 1/2 tsp.
Ingredients For Stuffing.
- Potatoes - 5.
- Salt - 1/2 tsp.
- Amchur Powder ( mango powder) - 1/2 tsp.
- Coriander leaves - 2 strings.
Method To Make Stuffed Kulcha.
- Boil 1/2 cup of water and add yeast into it. See to it that it gets dissolved completely.
- Take a big mixing bowl and add maida ( all purpose flour ), salt, milk, baking soda, curds ( yoghurt ), sugar, and dissolved yeast in it.
- Mix well and add water only if required. Knead the dough and add 1 tsp of oil.
- Mix well and close the dough with a lid for 4 hours.
- Meanwhile, boil the potatoes and mash it well.
- Add salt, amchur powder, coriander leaves.
- In the mean time, divide the dough into lemon sized balls.
- Roll out each ball into small circles and spread the potato mixture evenly all over it.
- Close from all the sides and shape into a round ball once again.
- Gently roll out this stuffed round ball into a chapati ( flat bread )
- Heat a skillet ( tawa) on a medium heat.
- Roast the kulchas on a low heat adding ghee or oil till some small brown spots appear.
- Turn over to cook on both the sides of the kulchas.
Your stuffed kulchas are ready to be served.!!!
Kitchen Masti Points.
- You can mix paneer ( cottage cheese ) along with potatoes for a richer taste.
- See to it that the dough is not sticky.
- If you do not prefer the yeast, omit it and increase the quantity of yoghurt to get pluffy kulchas.
