This biryani takes around 1 hour to prepare. The ingredients mentioned here is enough to serve two people.Ingredients For Veg Hyderabadi Biryani.
- Basmati Rice - 1 cup.
- French beans - 1/4 cup.
- Carrot - 1
- Green peas - a hand full.
- Cauliflower - 1/4 cup.
- Onions - 3.
- Salt - as per taste.
- Caraway Seeds (Shah Jeera ) - 1/4 tsp.
- Ginger garlic paste - 1tbsp.
- Pudina ( mint ) paste - 2 tbsp.
- Coriander leaves paste - 1 tbsp.
- Black cardamoms - 3.
- Cloves - 2.
- Cinnamon stick - 1 inch.
- Turmeric powder - 1 tsp.
- Saffron strands - 3 soaked in 2 tbsp of hot water.
- Bay leaf - 1.
- Curd - 2 tbsp
- Green chillies - 2 .
- Cashew nuts - 6.
- Poppy seeds ( khus khus ) - 1 tsp .
- Coriander seeds - 1 tsp .
- Red chillie powder - 2 tsp.
- Garam Masala powder - 1/2 tsp
- Oil - 2 tbsp
- Ghee - 2 tbsp
Method To Make Veg Hyderabadi Dum Biryani
- Heat a deep pan ( Kadai) with oil in it.
- Add 1 chopped ( thinly sliced) onion into it and fry till it turns deep brown and keep it aside. Grind it later on.
- Fry black cardamoms, cinnamon, cloves, coriander seeds and poppy seeds in 1 tsp of oil.
- Powder the above fried items in a mixer jar.
- Chop all the vegetables and para boil it.
- Boil the rice till it is 3/4 done.
- Take a deep pan or Kadai and add 2 tbsp of ghee in it.
- Add 1 chopped onion,bay leaf, para boiled vegetables, powdered Masala,and grounded mixture.
- Mix red chillie powder ,turmeric powder, Caraway Seeds ( Shah Jeera), Garam Masala powder, ginger garlic paste, salt, pudina ( mint ) paste,and corionder paste.
- Add the boiled rice and soaked saffron and curd to it.
- Mix it well and finally add fried cashew nuts.
- Close the lid and allow it to cook in the dum. For this you will have to seal the Edges of the vessel with chapati dough and let it remain in low flame ( sim ) for around 10 minutes.

Kitchen Masti Points.
- Cooking in dum is optional.
- Instead of adding the paste of coriander leaves and pudia ( mint ) leaves, you can chop it and add it directly.
