Uthappa / Uthappam Recipe - 4 Varieties ( Onion Dosa )

Uthappam is nothing but a dosa in a different style. However, there is a slight variation in the measurement of ingredients. Uthappa is almost like an Indian version of pizza. You can prepare this dosa with a variety of toppings like onion, capsicum and paneer, corn toppings and so on which I have shown in detail. This Uthappam is almost like a full meal. It is healthy and nutritious also since it contains Urad dal ( Black Gram ). Urad contains lots of proteins and is very beneficial for a vegetarian diet. It contains plenty of fiber and so, it is very helpful in digestion but, however, over eating can cause flatulence. It is also useful for those ladies who are under going the stage of menstruation. So let's start with Uthappam.




Onion Uthappam





How To Prepare  Uthappam / Uthappa.

Grind the batter on the previous night itself. Note that fermentation is required for around seven to eight hours.

Ingredients For Uthappam 


  • Urad dal - half cup
  • Rice - 4 cups
  • Salt - as per taste
  • Flattened rice ( avalakki ) - 1/4th cup
  • Fenugreek ( methi seeds ) - 1/2 tsp
  • Oil - as required


Method To Prepare Uthappam / Uthappa


  • Soak the urad dal ( Black Gram ) and methi seeds together for around 3 - 4 hours.
  • Soak the rice separately for 2 - 3 hours.
  • Grind urad dal and methi seeds together in a grinder.
  • Keep adding little by little water at regular intervals
  • After five minutes, you can add washed and soaked flattened rice ( avalakki ) into the grinder.
  • Now, grind it for twenty minutes and then transfer it into a big vessel.
  • Later on, grind the rice to a smooth consistency by adding little water at regular intervals.
  • Now, mix both the batters and add salt into it.
  • Let it ferment for around 7 - 8 hours.
  • Now, the Uthappam or Uthappa batter is ready to take the shape of a dosa.


Preparation Of  Uthappam


This dosa is usually served with different toppings like onions, capsicum and so on. I will show you 4 different  Uthappa toppings

Topping no. 1 ( onion topping )

Onion Uthappam
  • Take a bowl with 2 finely chopped onions in it.
  • Add 1/4th cup of chopped coriander leaves and two chopped green chillies.
  • Mix it well.
  • Now, heat a dosa pan.
  • Add half tsp of oil and spread it evenly on the pan.
  • Now, pour dosa batter ( 2 ladles ) on to the pan with the help of a ladle and move it in a circular motion slightly so that the dosa does not become too thin. It should be thick like a pizza base.
  • Sprinkle chopped onions, coriander leaves and green chilli mixture over it. 
  • Close the lid and cook in medium flame for around 2 - 3 minutes.
  • Now, open the lid and add one tsp of oil and flip the dosa onto the other side.
  • When it is slightly roasted, transfer the dosa onto the serving plate.

Your Onion Uthappam is ready to be served.!!!

Garnish with butter or ghee

Topping no. 2 ( capsicum and paneer topping )

Paneer Capsicum Uthappa

  • Chop one capsicum, one onion, two green chillies, a few coriander leaves and add two tbsp of grated paneer ( Cottage Cheese ).
  • Mix everything in a bowl.
  • Now prepare uthappam on the tawa.
  • Sprinkle this mixture on top of it.
  • Repeat the same process as mentioned above.

Your capsicum and paneer topping Uthappam is ready to be served.!!!

Garnish with butter or ghee

Topping no. 3 ( American Corn )

Corn Uthappam

  • Mix 1 / 4 cup of American Corn, 1 medium sized onion, 2 chopped green chillies and 1 / 4 cup of coriander leaves in a bowl.
  • Now prepare uthappam on the tawa.
  • Sprinkle this mixture on top of it.
  • Repeat the same process as mentioned above.
Now, Uthappam with American Corn Topping is ready to be served. !!!

Topping no. 4 ( Cheese )

  • Firstly, spread the uthappam batter on the heated pan.
  • Sprinkle the grated cheese all over the uthappa.
  • Close the lid and roast it on a very low flame. 

Kitchen Masti Points

  1. Uthappam should always be roasted on a medium flame.
  2. See to it that the batter is not too watery.
  3. Pudina Chutney is an ideal combination along with Uthappa.
