The reason I call this Special Vegetable Biryani because no where you can find a biryani with a vegetable beetroot in it. I learn to prepare this Biryani Recipe from the mother.It gives a exquisite aroma and bright red beetroot color which makes it something more unique among biryanis.
Usually children create a lot of fuss to eat vegetables but in this recipe almost all vegetables are included which makes it a balanced diet.

How To Prepare Special Vegetable Biryani
This vegetable biryani takes around 1 hour to prepare
Ingredients To Prepare Special Vegetale Biryani
- Basmati Rice - 1 cup
- Beans - 50 grams
- Carrot - 50 grams
- Beetroot - 1
- Potato - 1
- Peas- Quarter Cup
- Cabbage - Quarter Cup
- Cauliflower - 1/4 Cup
- Khus Khus - 2 tsp
- Ginger Garlic Paste - 2 tsp
- Coriander Seeds - 1 tsp
- Red Chili - 5 or 6
- Green Chili - 3 or 4
- Coconut Gratings - 1/4 Cup
- Coriander Leaves - 1/2 bunch
- Cloves - 4
- Cinnamon - 1 inch
- Marati Moggu - 2
- Salt - 2 tsp
- Tamarind - 2 tsp
- Tomato - 2
- Onions - 4
- Anni Seeds - 1 tsp
- Bread Pieces - 2
- Cashew Pieces - 2 tsp
- Turmeric - 1/2 tsp
- Water - 2 Cups
- Oil - 3 to 4 table spoon
- Ghee - 2 table spoon
- Garam Masala - 1 tsp
How To Prepare Special Vegetable Biryani
- Soak Khus Khus 30 minutes before preparing the rice.
- Next, boil the rice either separately or in the cooker.
- Boil the vegetables separately
- Fry 1 Onion, add Anni seeds , green chili, red chili, ginger, garlic , coriander seeds, cloves, marathi moggu, cinnamon, tamarind , khus khus, coconut scrapings, half of coriander leaves.
- Griind all of them to a smooth paste with a little water.
- Now keep a big pan over the stove.
- Add, 3 to 4 table spoon of oil.
- Add onion and keep frying.
- Add tomatoes and boiled vegetables and grounded paste.
- Add salt , turmeric, garam masala and fry for a couple of minutes.
- Add the boiled rice and mix it properly so that the masala gets coated to all the vegetables and rice.
- Fry, bread pieces in ghee or oil and roast it.
- Garnish the rice item with fried bread pieces and cashew.
The Vegetable Biryani with a unique taste is now ready.!!!

Vegetable Raitha Recipe
- Curds - 1 cup
- Onion - 1
- Green Chiili - 1
- Salt
- Tomato - 1
- Coriander Leaves
- Cucumber - 1 small piece
- Jeera Powder - Optional
Chop all the items like onion, tomato, coriander leaves, green chilli, cucumber and add it along with the curds into a bowl. Add Salt, jeera powder. Mix it thoroughly and serve it along with the Biryani
