Paddu which is also known as Guliappa or Paniyaram or Gundponglu takes a prime position in South Indian Kitchens. It has become a staple food for everyone. Nowadays if you go on in the streets you can find people selling this paddu on the streets itself. It has become a road side eatery in South India.
Eating the steamed food is healthy as when compared to eating the oily stuffs like Gobi Manchuri and so on.
I usually, prepare Dosa also sometimes out of paddu batter. It comes out very well. It is also one of the best items for the tiffin box because when it cools down, it does not become soggy like any other dosa.
Guliappa which is actually a Kannada word, becomes Pitfather when translated to English.

How To Prepare Paddu / Guliappa
To prepare Paddu, you will have to use a Paddu pan which are available in the markets. You get both non stick and the good old traditional ones. The difference is, in the traditional type, you will have to use a bit more Oil than the non stick version. But , in my opinion it is better to use the traditional ones since the taste has an edge over its other version. I use the traditional one itself which I have displayed it in the image below.
Paddu / Guliappa Ingredients
- Dosa Rice - 2 Cups
- Urad Dal - 1/2 Cup
- Rice Flakes - 1/4 Cup
- Fenugreek ( Methi Seeds) - 1 tbsp
- Salt - As desired.
- Oil
Method To Prepare Paddu / Guliappa
- Soak The Urad Dal , Rice and methi seeds separately for 3 - 4 hours.
- Grind them separately.
- Add salt to the batter and let it stay for the whole night or for 7-8 hours so that it gets fermented so that the paddu will turn out to be soft
- Heat the paddu pan on a medium heat level.
- Add a spoon of oil to all the chambers.
- Stir in the batter and fill the paddu chambers like I have shown below
- Close the lid.
- After 5 minutes, open the lid and flip the paddu with the paddu spoon which is available in the market.Alternatively, you can use any other spoon also.
- Let the flipped side also get heated for another 5 minutes.
- Remove the paddus and serve it with Onion Chutney.
Your Paddu is now ready !!!!
Kitchen Masti Points
A slight variation can be made with the paddu batter. You can also prepare masala paddu by adding the following items.
- 3 - 4 green chillis
- Jeera - 1tsp
- Coriander leaves
- Curry leaves - A few
Mix it and follow the above mentioned procedure
You can also prepare sweet paddu by adding little jaggery and coconut. Please note that if you are preparing sweet paddus , then you will have to add ghee instead of oil.
Some people also add banana pieces and less of jaggery for that.
