Boondi Laddu / Ladoo Recipe

Boondi Laddu is of the the oldest and the most traditional varieties of sweet. Very common indeed, and prepared in almost all functions. These laddus are also available in the sweet stalls but they are made out of maida unlike the ones which I am going to show you today. The sweets prepared out of maida ( all purpose flour), if consumed in excess, are not good for your health

How To Make Boondi Laddu / Ladoo Recipe


This sweet takes quite some time roughly somewhere around 2 hours. Once you learn the consistency of the sugar syrup, you can prepare it easily, but indeed, a quite lengthy process.

Boondi Laddu Ingredients

Lets prepare Boondi and sugar syrup separately.

Firstly, lets concentrate on preparing Boondi

Boondi Ingerdients

Besan ( Gram Flour ) - 1 cup
Water - As required.
Salt - A small pinch
Oil - To Deep Fry ( around 1 1/2 to 2 cups)

Sugar Syrup Ingredients

Sugar - 2 cups
Water - 1 cup
Cardamom Powder - 1 tsp

Other Ingredients Required

Ghee - 2 tbsp
Cashew Nuts - 2 tbsp
Raisins - 2 tbsp
Cloves - 5 -6

Method To Prepare Boondi Laddu

  • First and foremost, prepare the sugar syrup by boiling sugar and water till you get a single thread layer consistency.
  • Add cardamom and keep it aside.
  • In the meantime, mix besan , water and a pinch of salt to a dosa consistency.
  • Heat the Oil to fry the boondi.
  • Take a perforated Ladle and add 1 big spoon of batter over it.
  • Small balls of besan ( gram flour) will fall into your oil pan.
  • Fry them for some moments and then transfer it to a tissue paper covered plate to drain the excess oil.
  • At this time, the sugar syrup should be warm.
  • Mix the fried boondi into it.
  • Add cashew nuts, raisins, cloves.
  • Smear ghee over your hands and shape the mixture in a ball form

Your Boondi Laddu is now ready to be served !!!!!

Kitchen Masti Points

  1. The boondis should be prepared immediately as soon as it is mixed with the sugar syrup, otherwise, the sugar syrup tends to get crystallized.
  2. Suppose, if the sugar syrup becomes too sticky, add a little quantity of water and heat it for a few seconds,
  3. The boondi laddus that you get in the sweet stalls is usually prepared out of maida ( all purpose flour). But gram flour has an advantage over maida, both in terms of taste and health.
  4. As far as possible , see to it the the boondi mixture and the sugar syrup does not come in contact with water., otherwise , the laddus will be spoiled very quickly., if not it can be stored for around 10 days very easily.
  5. While preparing sugar syrup, suppose if you are not able to realize the thread consistency, then take a small bowl filled with water, add 2 drops of sugar syrup into it. Just feel it. If it has thread type consistency, then it means that your sugar syrup is ready. Otherwise, you will have to extend boiling the sugar syrup for a few more moments.
